Preheat oven to 400°F Sift flour into a bowl with salt, margarine or butter and fat, and rub in
until the mixture resembles fine breadcrumbs. Stir in sugar. Mix pastry to a smooth dough
with a little cold water. Knead lightly, then roll two-thirds of the pastry, and line a 1-1/2 pint
pie dish. Arrange a layer of apples on the pastry base, sprinkling them with lemon juice. Mix
the sultanas with the rest of the ingredients, then put over the apple in layers. Roll out the
remaining pastry, brush the edges of the pastry base with water, and cover the pie. Press the
edges together to seal, then trim and flute the edge. Make decorations with pastry trimmings
if wished, sticking them to the pie with water. Cut a small hole in the middle. Bake in the
preheated oven for 10 minutes, then lower the oven to 375°F, and bake for a further 25-30
minutes, until the pastry is golden. Sprinkle with caster sugar.

Rychlé moravské koláče
500 dkg hladké mouky | 250 ml vlažného mléka | 2 kostky kvasnic | 2
lžičky cukru | 4 žloutky - 1žloutek přijde do tvarohu | 2 dcl oleje | 1
špetka soli, muškátového oříšku | 1 lžička strouhané citrónové kůry,
rozinky | 1 měkký tvaroh | 1 švestková povidla | 2 lžíce cukru do
tvarohu | 1 hrneček drobenky - máslo, cukr, mouku, vanilkový cukr
Odvážíme si mouku, zaděláme kvásek z mléka, mouky, dvou lžiček
cukru a dvou kvasnic. Do zbylé mouky přidáme tři žloutky, špetku soli,
muškátový oříšek a citrónovou kůru.
Posypeme
drobenkou, necháme odpočinout cca deset minut a pečeme při 180° dorůžova.

EXCERPT 4
EXERCISES
Aim: To begin the lesson on shading. This will encompas cross-hatching and other useful
methods as well as noting the theory of shading generally.
Materials: The sketch pad, HB and 4B pencil, eraser.
n Read Excerpt 1 and underline all linguistic features typical of the language of instruction.
o Compare Excerpt 1 (a recipe in English) and Excerpt 2 (a recipe in Czech).
p Look at the titles of various manuals (Excerpt 3). What kind of instruction do they offer?
Which title do you like best?
q Try to translate the titles of the manuals from Excerpt 3 into Czech.
r Look at Excerpt 4. What kind of instruction does it offer? Comment on the language.
s Compare Excerpt 1 and Excerpt 4.
t Think of an interesting activity. Write a simple piece of instruction for this activity (about
100 words). Use the appropriate language (see Excerpt 1 and 4).
a) Without using the ruler (or any other straight
edge) prepare the page with margin and title
boxes then: Make a light freehand sketch of a cup
as shown above, then repeat this until four similar
cups are made.
b) Using short strokes firm in cups
c) Use the 4B pencil and medium pressure 'hatch'
a series of parallel sloping lines as shown.
d) Do the same, though with shorter lines, in the
other direction. Next use some vertical lines and
lastly some horizontal. This method of shading is
called cross-hatching and is useful for quick
renditions
