Shops and Services
It was 7.00 in the morning on 1st November 2011, and I was standing at the
new bus stop in Želetavská Street to
monitor the very first bus in the history
of BB Centrum that debuted on a brand
new route. I had a short while to give my
thoughts, not only to this service but to
the entire BB Centrum.
Shuttle service is extremely welcome
and very much in demand. We are aware
of this from satisfaction surveys as well
your occasional emails. This is why I am
very happy to see that we have managed
to further extend this popular service.
While standing at the stop, I caught my
train of thoughts taking me back to the
very beginning of our shuttle service. It
was May 2007, and my colleague, Martina
Čapková, monitored the very first bus
running through BB Centrum. Out of
sudden, I realized the impressive progress
that has been achieved, in addition to the
shuttle service, by the entire BB Centrum for these 4.5 years; specifically, the
buildings which have been added, shops,
services, the park... The entire complex
has undergone tremendous development
and, as you will discover on the pages of
this edition, there is no end
in sight to the further progress.

BB Centrum Shuttle Service
Extended
The shuttle service significantly
facilitates personal transport to the
complex, making it faster. Being in
operation on weekdays from 7 am
to 7 pm, the BB Centrum buses and
their stops can be easily identified
thanks to a distinctive logo and
colour scheme.
Two bus routes are currently at your
disposal and, moreover, the launch
of a third route is in the pipeline in order
to improve transport to the northern part
of BB Centrum. In connection with this
new route, changes in the overall timetable can be expected from November
2011. The new service will be in operation
between Budějovická C Metro Station
and Olbrachtova Street, running along the
route of Želetavská – Brumlovka – and
back (see map), and in peak hours there
will be always two buses. The existing
route remains in operation from Budějovická C Metro Station along Brumlovka,
Za Betou, Brumlovka and back.

Nová Karolina Park Is Coming to
Life in the Heart of Ostrava
The construction of Nová Karolina Park
got underway again in the very heart of
Ostrava after several months’ shutdown.
In addition to PASSERINVEST GROUP
and Multi Development, another partner,
GEMO OLOMOUC, entered the project
in June, along with taking on the role of
general contractor. This imaginary gate
of Nová Karolina into the historical heart
of this Moravian metropolis is slated for
completion in spring 2013.
The building will offer a total of
24,600 square metres of attractive office
space, and, on the ground floor, another
3,700 square metres of retail space.
Also, almost 280 parking spaces will be
available on the basement storey of the
building. This six-storey administrative
building has been designed by Vít Máslo
and David R. Chisholm, CMC architects
studio.
Located in the north-eastern part of
the newly urbanised area of Nová Karolina, the office building
Nová Karolina Park is one of three
buildings that are being planned there. It
is envisaged that the other two projects,
a shopping & entertainment centre and a
Nová Karolina residence, will be completed in spring 2012

More companies have joined the

large multipurpose complex, situated
in Prague 4, has become home for
hundreds more employees. The list

Fresenius Kabi, Gemalto and Tchibo.

UniCredit Bank Is Moving
As we have already informed you, the
UniCredit Bank Group has decided to
move into Building FILADELFIE. This
move began in September – the company has already occupied the first two floors of the building. Another seven floors
and the remaining five will be occupied
in November and March respectively.
FILADELFIE will eventually accommodate
a total of 1,800 employees.

Clothes Collection for Ukraine at
Christian Primary School Elijáš
The civic association, MARANATHA, is
organizing, in cooperation with Primary
School Elijáš, the fourth charity collection
of used clothing and textiles for socially
endangered people in Ukraine.
The collection will take place in Primary

“BB Centrum Is a Small
City in the City,“
says Radim Passer, Chairman of the Board
PASSERINVEST GROUP.
It’s been years since BB Centrum became the largest business park in
the Czech Republic. It provides more than 10,000 people with a quality
working environment. We spoke to Radim Passer, Chairman of the Board,
PASSERINVEST GROUP, to find out how this unrivalled complex was created
and what else will be built there.

It’s been exactly 15 years since the
first buildings began to rise on the
BB Centrum site. To what extent
were you clear on the final shape of
the newly emerging complex as early
as then, and to what extent was the
business centre created “by doing” –
during the construction?
This urban project was being formulated
in the years of 1992 and 1993, when an
urban competition for the development of
the area had been launched by the City.
As we owned about 3.5 hectares of local
land then, we entered into cooperation
with Architect Aulík’s studio, which won
the competition.
Although we had a basic idea, no way
was everything planned in detail. We
were lacking in experience, which we
have gained in the course of time since
the occupation of the buildings was
taken up, and the tenants’ needs and
other factors were gradually identified.
Understandably, you’re not likely to guess
how many parking spaces an unknown
tenant requires, or what kind of accessorial services are in demand, what
capacity of public transport is adequate
and so on.
This year will see the completion
of the 15th building in BB Centrum:
Residential Park Baarova. What
direction will the construction take
further on?
At present, the construction of the
Residential Park Baarova is in the final
stage. At the same time, we are preparing the construction of Building G on
the corner of Michelská and Baarova
streets. It is slated to begin this October,
and it is envisaged that the building will
be completed at the end of 2012. We
have received a building permit for the
construction of thus far the largest administrative building in BB Centrum, called
DELTA, situated between Vyskočilova
Street and the Community Centre. The
last office building to be developed in this
complex, Building OMEGA, is planned
in the southern tip of the complex along
the trunk road. It is slated for completion between the years 2015 and 2016.
Another park, with an ambition to be a
new green and quite dominant feature of
the southern half of BB Centrum, is to be
expected between this building and the
Community Centre. Furthermore, another
two residential projects and the possibility
of a hotel are in the visionary stage.
How do you manage to attract tenants for the administrative buildings
of BB Centrum?
Thank God, we have always managed to
occupy all of the earlier stage developments down to the last square metre.
Naturally, in the course of time, some
lease contracts expire; some tenants
abandon their activities in Czechia, while
others are purchased or merge with other
companies and move to other places.
Nevertheless, they are replaced by
others.We have adopted a client-oriented
approach, along with putting stress on
the quality on a long term basis in order
to win out over tough Prague competitors. Over 10% of our total investment
funds have been invested so far in nonprofit-making areas of
BB Centrum. I mean its school, nursery
school, church, Brumlovka, park, water
features, sports ground, roof gardens,
transport infrastructure and so on.
I believe that this also explains why the
latest building – FILADELFIE – has been
entirely occupied with the exception of
one floor. Some of the previously completed buildings are entirely occupied
while there is very little free space in the
others. The majority of free areas are
currently in Building Beta, where the aforementioned events have occurred.

How are things with the Residential
Park Baarova?
It will have a total of 142 units, with
97% of them being apartments. Of those,
40% have been presold. Given the highly
competitive environment in the highermiddle level of the market, where we are
aiming, I definitely do not consider that
a bad figure. I am proceeding from the
assumption that, when looking for an
apartment of this category and in this
price range, it is easier for people to decide if they see with their own eyes where
there money is going. As the developers
of the project, we will be satisfied if the
entire development is sold during the
year 2012.
Do you learn how people working at
BB Centrum feel within this complex?
What are and what aren’t they happy
about here? What are they missing?
At the turn of the millennium, we began
to carry out a regular satisfaction survey
every three or four years. The last series
of questions was responded to in 2008,
and the next questionnaires will be administered in the second or third quarter
of 2012. By then, UniCredit Bank will have
been moved in, so – apart from people
working here on a long-term basis – we
will also receive feedback from those that
have just arrived and can compare it with
their previous locality. The survey questionnaires are rather lengthy, and
I am pleased to see that the local tenants
and their employees have always actively
participated – the return of 2,000 out
of 8,000 questionnaires administered
in the last survey, which we considered
excellent feedback. We appreciate their
willingness, trying to respond to all relevant comments and suggestions.
What are the most frequent requirements?
There is a typical range of issues. Surely
the first is transport. Based on the results
of the survey before last, we have introduced, among other things, a shuttle bus
service between BB Centrum and Budějovická. We also focus on greenery, as
it is another frequently discussed topic.
We would like to create a quality working environment to provide people with
certain positive aspects – to make them
feel comfortable here. This is why Baar
park and green roof terraces have been
created and why we attempt to work with
water features and so on. Also, people
regularly raise issues relating to operations
inside the buildings, where ventilation and
air-conditioning techniques are a recurring issue. However, most companies
have opted for an open-

the death of his first-born son.

fundamental change in his private life and
overall attitude to the world. He is behind
a great number of charity projects, along
with establishing the Maranatha civic
association.

plan arrangement of their offices, where,
by its very nature, the environment
cannot be adjusted to satisfy everyone.
Some people like a rather cool environment, whereas the others prefer warmth.
This is all about adjusting the settings at
such levels that would be comfortable
for the majority and, at the same time,
the others would be able to work in the
given space under the best conditions
possible. To adjust the air-conditioning
setting always takes some time, so it is
necessary to optimize the interior conditions on a gradual basis after the tenants
have moved into the building.
The other “evergreen” issues are canteens and catering opportunities in the
particular buildings and the network of
shops and services. In FILADELFIE, we
have recently opened an Albert supermarket and a dm chemist’s, offering services which, having been heavily soughtafter by people, were a top priority for
us in terms of ensuring the best possible
quality. Speaking of services,
I shouldn’t forget to mention the Balance
Club Brumlovka, operating at
Brumlovka almost five years. It is an unrivalled wellness centre of its kind within
the entire Czech Republic. We have
invested substantial funds in its creation
and launch and we are truly pleased to
hear our clients’ feedback.
There is a lack of free parking, as
they say....
I would even say there is a lack of many
more things that could be provided for
free. For instance, free office space...
Which direction will the future extension of the services take?
Before I answer, I must say that for me,
as a believer, the creation of our community centre, complete with a prayer
hall, has been one of the most important
stages of the construction of BB Centrum
as it fosters spiritual Biblical values, along
with providing people with crucial information for human health: about a healthy

lifestyle. We have also invested substantial funds in the funding of a Christian
nursery and primary school. These are
core elements which, adding some
finishing touches to the local atmosphere,
are appreciated by many. With regard to
the other plans, one should principally
mention that a relatively large retail space
will be developed in the southern part
of BB Centrum: in Building DELTA. As
for the services, it will not be clear what
kinds will eventually be introduced there
until we collect some feedback from
our tenants and our next questionnaire
survey. What greatly contributes to the
overall tenant satisfaction is, as I have already said, greenery and relaxation areas.
This is why we are preparing a project
for the other park, called Brumlovka
and situated in the southern part of BB
Centrum behind Building Gamma which
will be, unlike Baar Park, also open to
dog walkers. It is envisaged that a fairly
large children’s playground will constitute
its park and, moreover, we would like to

way of explaining the fundamentals of the
good news, evangelium.
Do you have an idea of how BB Centrum is perceived by the people from
the neighbourhood, and whether they
use the local services?
In no way do we close off BB Centrum
but quite the reverse is true: we are also
pleased to offer something useful for those who are not working here. For example, a Czech Post office has been established at Brumlovka, and I am always
happy to see plenty of people using it. At
present, the people from the surrounding
area can benefit from an integral network
of shops and services in BB Centrum.
There is also ample relaxation space with
benches and green vegetation between
the buildings, which is used by people
of all age groups. Moreover, people from
both nearby and remote areas attend the
community centre and the Balance Club
Brumlovka. We are pleased to see that
BB Centrum lives through people.
How do you use the BB Centrum services and supporting facilities?
I come here regularly to work. I often
have lunch here. Being a vegetarian,
I especially have close ties to the Maranatha restaurant, but I also visit all the
others. I use the other shops and services
as well. At least once in a while I pop
in the Balance Club to keep informed
about the quality of this facility, along with
testing the resistance of my muscle to
a physical load. And, owing to my ample
ringlets, I go to the Bomton hair studio
every week.
If you reminisce about the fifteen
years of construction and existence
of BB Centrum, is there anything you
would do in a different way now?
Definitely, yes. Everyone makes mistakes.
It is important to learn from mistakes and,
if possible, correct or at least avoid repeating them. Well, if I started with BB Centrum again with my present experience,
I would certainly have roof gardens created on all the buildings if technically possible. The Prague mosaic would be used
for paving the areas around buildings A, B
and C, which is, on one hand, many times
more expensive; but, on the other hand,
it exudes a pleasant urban atmosphere.
Also, we would certainly design an interesting water feature between buildings C
and B, which is located by
a number of the other buildings.
And what brings you the greatest joy?
First of all, it is the overall compactness of
the business park. Although almost none
of the expert public believed at the very
beginning that anything like this could
be developed, BB Centrum has become
the largest business park in the Czech
Republic and has achieved
a corresponding reputation. Nowadays,
a quality and pleasant working environment for over 10,000 people has been
created here. It is a kind of small city
within the city, which must provide an
opportunity to live one’s own life here. And
even more life will be certainly brought

here by the inhabitants of the Residential
Park
Baarova, which is nearing completion.
They will also be able to use the local
shops and services at weekends, which
will add another dimension to the entire
complex.
Passerinvest is also involved in Nová
Karolina, Ostrava. Could you briefly
outline this project?
We chose Ostrava as the location of
the first out-of-Prague interest in 2005,
because we considered Brno already fully
occupied in terms of development activities. Speaking of Ostrava, we took liking
to the area of Nová Karolina. The project
for the development of this site was commissioned by the city to the Multi Development company, which consequently
invited us to carry out the office phase.
Unfortunately, a crisis struck soon after the
contract had been signed and we were
forced to postpone our plans until more
favourable times. The Ostrava market has
been literally frozen. In order to go on now,
we have joined with anoth-er investor, the
Olomouc-based Gemo company. This
partnership has enabled us to channel
more funds into the project, which helps
us see that the entire project be completed, including leasing units which are also
a hundred metres each in size, which is
in demand on the Ostrava market. We
therefore don’t have to wait God-knowshow-long for a tenant any longer.

Building G
A cross-section of the building
The other building, which is being raised
at BB Centrum, bears letter G as its
name. Designed by the A8000 architectural studio, Building G is exceptional
because, being situated on the gap site
of an existing block, it has been adapted
to its close environment. It is located on
the north-eastern corner of an unfinished
urban block: on the corner of Michelská
and Baarova streets. “With respect to the
investor’s order and general urban relations, we have designed a building whose
height and plan is in accord with Michelská
Street,” says Pavel Mařík from A8000.
“The result is an L-plan shaped building.
It is a distinctive urban building with a
peaceful inner garden, and a pleasant
interior,” he adds.
On completion in the first quarter of 2013,

Building G will offer approximately
5,500 square metres of office space on
four above-ground storeys, in addition
to 1,000 square metres of retail on the
ground floor. As the office space is infinitely
variable, rather small units of
200–500 square metres in size can be also
leased out. Moreover, 148 parking spaces
for tenants and their guests will be created
on the three basement levels.
To sum up, further progress is in store for
the complex of BB Centrum. With the construction of these new buildings, the entire
project will take the next steps toward
completion, and, what is more, a self-contained “city district”, significantly contributing to the development of the entire
municipality of Prague 4, will be created.

What fundamental idea did you have
on your mind while designing Building
G?
The fundamental ideas were to complete
an urban block and accentuate the corner,
along with embedding the building on
a slope so that it could be, in any case,
pleasant and hospitable to all pedestrians.
Again, what are a few adjectives that
describe Building G?
Simple, flexible, friendly, effective, economical, urban
Personally speaking, for what is this
building special to you?
Although this building, being constructed
on a gap site on a slope, had
significantly more difficult site conditions
than the others, and is perhaps smallest
of them, it bears comparison with them
from all views.
Who is behind the idea and design of
the building?
The authors of the design are Jiří Střítecký
and Martin Krupauer; the co-author and
the project chief architect is Michael
Vojtěchovský.

Kdo je zvyklý na potemnělá zákoutí zaplněná starým nábytkem, spoustou
polštářků a lehkým oparem z vodních dýmek, bude z čajovny Good Tea Point
asi notně překvapen. Charakter prodejny otevřené do prostoru obchodní
pasáže budovy FILADELFIE se obvyklému vzhledu čajoven v Česku značně
vymyká a možná i leckoho může vyvést z míry. Při podrobnějším zkoumání
však zjistíme, že tato jinakost vůbec není na škodu. Ba právě naopak.

Tajemství přípravy
Pro přípravu nápojů se v Good Tea Pointu
používají čaje velmi vysokých jakostních
tříd a samotné „vaření“ probíhá tak, aby na
jednu stranu netrvalo dlouho a na druhou
stranu aby hotový nálev vypadal, voněl
a chutnal přesně tak, jak má, a obsahoval
přesně to, co v něm má být.

ství suchého čaje, teplotě vody
a době louhování, přičemž první a poslední
podmínka jsou vůči sobě do jisté míry
v nepřímé úměře. Pokud dám více čaje,
mohu louhovat kratší dobu, mnohdy stačí
i několik desítek vteřin,“ vysvětluje tajemství
rychlé obsluhy majitel čajovny Pavel Mastný.
Protože delším louhováním by došlo ke
změně chuti a připravený čaj by se tak
de facto zkazil, servírují se v Good Tea Pointu čisté nálevy bez čajových lístků.
„Naši zákazníci tak mají jistotu, že pijí
to, co si objednali, a pokud si to příště dají
znovu, bude to chutnat stejně,“ upozorňuje
druhý majitel Radoslav Polášek.
Všechny čaje z nabídky oba spolumajitelé
čajovny průběžně sami na sobě testují a potvrzují tak, že na kvalitu jejich zboží je možné
se opravdu spolehnout.
Mléko nic nepokazí
Jak už bylo uvedeno, hlavní výhodou čajovny Good Tea Point je, že si čerstvě připravený nápoj můžete odnést s sebou, a sice
v praktickém uzavřeném kelímku ve třech
velikostech. Máte-li čas chvíli posedět, i to je
vám umožněno – buď v křesílkách u jednoho ze dvou stolků, nebo na barové stoličce
přímo u pultu. V případě většího zájmu ze
strany zákazníků slibují majitelé čajovny rozšíření prostoru pro sezení o předzahrádku.
Vedle čajů klasických jsou v nabídce
samozřejmě i čaje ovocné a místní specialitou jsou čaje mléčné. Vyrábějí je tady podle
originálních receptur, a pokud jste je ještě
nezkusili, rozhodně se nemusíte bát, že by
se přidáním mléka čaj nějak pokazil. Díky
perfektně zvládnutému postupu přípravy
oba nápoje dokonale splynou, aby vytvořily zcela novou a chutí, vůní i konzistencí
naprosto jedinečnou kvalitu, kterou jinde v
Evropě asi hned tak nenajdete. Některé z
mléčných čajů je možné objednat i studené
s ledem.
Nejenom čaj
V Good Tea Pointu ale nezapomínají ani na
ty, kdo kouzlu čaje ještě nepropadli a raději
si dají pořádnou kávu. Tu si zde můžete vybrat ze šesti druhů. Surovinou pro přípravu
prvních pěti je káva z malé pražírny nedaleko
Prahy vyznačující se vysokou kvalitou a vynikající vůní i chutí. Šestou je originální sladká
vietnamská překapávaná káva dovážená
přímo ze Saigonu. Určitě stojí za ochutnání.
K dobrému pití samozřejmě také patří
něco k zakousnutí. V Good Tea Pointu si
za tímto účelem k čaji či kávě můžete dát
vynikající valašský frgál a od konce listopadu
rozšíří nabídku i čajové pečivo připravované
podle vlastní receptury. „Bude vyráběné
z japonského práškového čaje Matcha, aby
naši zákazníci měli možnost ochutnat čaj
i v jiné než v tekuté podobě,“ slibuje Radoslav Polášek.
Ale čaj prodávaný v Good Tea Pointu není
jen pro okamžitou konzumaci. Zakoupit je
zde možné i čaj sypaný pro přípravu doma.
Přímo na místě lze vybrat z nabídky cca 50
druhů čaje a další více než stovku nabízí
internetový obchod, jehož pobočkou a svým
způsobem i výkladní skříní vlastně Good Tea
Point je. Pokud tedy zvolený čaj nenajdete
přímo v prodejně, můžete si jej objednat po
síti a druhý den si ho zde vyzvednout.
K čaji pak také patří keramika, ve které
se tento nápoj podává, a nástroje pro jeho
přípravu. Good Tea Point nabízí ke koupi
i tento sortiment, zákazníci zde najdou např.
originální čajové nádobí od Petra Nováka,
čínskou keramiku Yixing, porcelán Ru Kiln
nebo pomůcky k výrobě čaje metodou
Gong Fu Cha. Vše ještě doplňuje bohatá
zásoba čajové literatury, a to jak naučné, tak

A protože se kvapem blíží Vánoce, připravili v Good Tea Pointu řadu dárkových sad

about Vegetarianism
The very essence of vegetarian nutrition is the reduction or total
exclusion of animal products in their diet (so-called veganism).
However, vegetarians differ, and can be
classified into four basic groups:
• Lacto vegetarians refuse to eat mammalian flesh, fish or poultry, but they do not
mind consuming milk, diary products or
honey.
• Ovo vegetarians also eat eggs, in addition to genuine plant foods.
• Lacto-ovo vegetarians include milk,
honey and eggs in their diet.
• Vegans refrain from all animal products,
including honey.
Semi-vegetarians
Another group of people, so-called semivegetarians, consume only certain kinds of
meat: pescetarians and pollotarians only
include fish and poultry respectively in their
vegetarian diet. The latter intermediate
stage between vegetarianism and a meat26
based diet involves a significant healthy
compromise in these times of industrial
production of genetically modified chicken
meat.
Regular consumption of fish does not
prove good for your health either, given the
high level of toxins in fresh and salt waters,
primarily near large cities and coastal
areas. What proves to be a totally sufficient
replacement for meat and meat-based-

products is pulses, nuts and oil seeds,
whose content of proteins, high-quality
fat, vitamins and minerals often compare
favourably with the content and digestibility of ordinary meat and milk.
Vegetarianism = healthier human,
healthier nature
The consumption of plant foods has
always presented the lowest element of
risk to the human being, along with laying
the least burden on the environment.
Animal products should provide no more
than a complement, which – owing to
the current level of pollution of nature and
profit-oriented agriculture – has become
the principal cause of diseases inherent in
modern life.
This certainly cannot be ignored from
either the scientific or moral point of view.
It is particularly town and city inhabitants
who should reconsider their lifestyle, and
taking into account the aforementioned
facts should contribute to their choices. A
well-planned and well-balanced vegetarian
diet certainly has an extremely beneficial
influence on human health. It can serve
as both a natural preventive measure,
and a significant part of the treatment for
those diseases of civilization as well as in
convalescence after surgery, where crucial
mistakes are often made.
Also, some top sportspeople are vegetarians and their success stories confirm
that plant sources are of high quality and
digestibility, and that it is even true of
people whose bodies are often exposed to
heavy weight or impact.
Vegetarianism and the diseases
of civilization
Vegetarian foods are usually low in saturated fat, along with having only minimal, if
any, cholesterol. This often corresponds to
low blood pressure, a common occurrence with vegetarians and vegans.
Also, the presence of growth hormones,
artificial fertilizers, antibiotics and preservatives is comparatively lower in plant
products and ingredients than in animal
products. One should also mention that
a vegetarian diet proves beneficial for

cancer prevention, primarily, cancer of the
large intestine and the stomach.
These forms of cancer affect vegetarians significantly less frequently than the
ordinary population, not only because the
cancer of the large intestine is closely related to the regular consumption of animal
fat, brines and preservatives contained
in smoked goods, but inversely, from the
absence of fibre and important nutrients
from plant sources in the diet. Cancer of
the stomach is often related to a high consumption of meat, alcohol, inner organs,
sausages as well as extremely salty and
spicy dishes.
Moreover, vegetarians usually eat
a larger proportion of raw, germinated and
soured foods which are rich in vitamins,
minerals, enzymes, plant dyes and special
immunity stimulants, which are excellent
preventers of cancer, cardiovascular diseases, diabetes and premature aging.

Sauté the onion in sunflower oil, add a
properly washed pumpkin, cut into cubes
of 2 x 3 cm (peeling is unnecessary).
Pour in the vegetable stock, add garlic,
salt and ginger. Place the bay leaf, allspice and whole pepper into a sieve and
insert into soup. Once the pumpkin is
tender, take the sieve out, mix pumpkin,
thicken the soup with corn flour, add the
Würzl vegetable bouillon and boil. Eventually, add coconut milk to make it softer.
Fry dried pumpkin seeds and insert them
into the soup when served.

Pour soya milk slowly into flour, sugar and cocoa
and continuously stir it in a bowl. Add oil, baking
powder, gingerbread spices and 3 tablespoons of
honey. Stir everything properly and put the mixture
on a greased baking tin. Bake in oven at 180 ºC
for 35 minutes. When serving, decorate the gingerbread with hot forest fruit and a sprig of mint.

Potato and asparagus soufflé with carrot mousse

Cut the peeled raw potatoes into small cubes, fry them in olive oil for 10 minutes, add 100 g
of chopped asparagus, parsley, salt and pepper. Mix the remainder of asparagus with cream,
eggs and salt. Coat a baking tin with vegetable butter and cover its bottom with baking paper.
Add the mixture of asparagus with potatoes. Pour in the soufflé mixture and bake in water at
180 ºC for 45 minutes.
Cook the carrots in steam for 15 minutes, mix them with 30 ml of olive oil, lemon juice and 100
ml of water. Season this mixture with salt and pour it softly over the plate before serving.

Cut the aubergine into thick slices lengthways, salt them and spread
with pesto. Let them marinate for 10 minutes. Sauté the onion in sunflower oil, add crushed tomatoes, garlic, Würzl, black olives, oregano
and salt. Boil the sauce and flavour it with basil pesto. Fry both sides
of the aubergine slices on a pan and, finally, add a slice of mozzarella.
Baste it with the ready sauce and bake in a preheated oven at 180 ºC
(approx. 10 minutes). Serve with potato and asparagus soufflé with
carrot mousse or mashed potatoes.
